TECHNICAL INFORMATION
Much of the harvest is done at night so that the low temperatures help preserve the aromatic characteristics of the Verdejo variety. Each step of cultivation and processing is subject to careful controls. The harvest is done during the night taking advantage of the cold of the night. Afterwards, the grapes are macerated at low temperatures to obtain the maximum expression of the variety. The fermentation takes place in stainless steel tanks at a controlled temperature, around 14-16 oC for about 12-15 days |
